My life began in a small farming community with a very large family garden, more fruit trees than a kid cares to count and daily chores outdoors. In addition to teaching me the challenges that farmers face with the seasons to grow food, it also taught me to appreciate the texture and flavor of truly fresh produce. Most of our meals were eaten together as a family and were balanced with the major food groups (including dessert). I credit my parents with building this foundation and knowledge of how to balance life with health and helping me become who I am today.

I am a registered dietitian, mom of a spunky 8-year-old and veggie gardener who loves to balance health with fun. Looking at eating habits of the average American today drives my desire and mission to make the foods we eat better for us. I have taken on the food industry from every angle, including working with manufacturers, restaurants and home chefs to drive better nutrition into the foods we eat. I am here to find a way to match what the consumer wants to eat with what they need to eat.And, the consistent message that comes up time and time again with my work is how we are eating too few plants!

Do not confuse my interest in promoting plants with veganism or vegetarianism. I want EVERYONE to have access to health through plants. Th ere is a lot of research to point to the benefits of increasing plants in our diet, which is why I have always said, “Eat More Plants!” And from the nutritionI’ve provided for each recipe in this cookbook, you will certainly see why. I am proud to work with this collection of friends to help you think outside the lunchbox when it comes to the meals you make for your family and friends. We are all in this together to live life to the fullest.
